Beef Satay with Peanut Sauce

This is one of the traditional Indonesian food...Satay is quite famous in Indonesia, many street food vendors sell this kind of food. Usually use chicken meat as the main ingredient. But now I tried to give it a little twist with using beef as the main ingredient. 


Ingredients:

  • 500 gr of beef, cut into thin strips
  • 500 gr of peanut
  • 5 clove of garlics
  • 5 clove of shallots
  • 5 red chilies
  • 1 tsp of cumin powder
  • 1 tsp of nutmeg powder
  • 1 Lemongrass
  • salt and pepper
  • 3 tbs of vegetable oil
  • 700 ml of water
  • 100 gr of brown/palm sugar
  • 50 ml of soy sauce
How to cook?

First to do.. Boiled the beef in pot with cumin powder, nutmeg powder, lemongrass, salt and pepper for season. Boiled the beef until tender. Remove from the pot, let it cool and don't throw away the beef stock. Then deep fried the peanut in hot oil until golden brown, take and drain the oil, then coarsely pounded, so you still get the crunchy from little chunk of peanut. After that blend the garlics, shallots, and chillies into paste. Then heat the oil in the wok, stir the spice paste until fragrant and pour the beef stock, palm sugar, soy sauce, salt and pepper for season, and pounded peanut. Mix it all together, cook for about 10-15 minutes until the sauce is thick. After that thread the beef onto wooden skewers, then grill it for about 3-4 minute per side. Dip it in sauce, serve it with hot steamed rice, sliced lime or lemon, and fried shallots..

Halloween Feast: Pumpkin and Cheese Mousse

Lets end this feast with something extra-ordinary dessert rather sweet candies.....
Ingredients:

  • Mashed pumpkin from half of pumpkin
  • 250gr of cream cheese
  • 250gr of whip cream, divide by two 125 gr each
  • 2 egg yolk
  • 100 ml of milk
  • pinch of nutmeg powder
  • pinch of cinnamon powder
  • gelatin powder
  • sugar
  • salt
  • vanilla extract
  • lemon juice from 1 lemon
  • 1 pack of oreo biscuits
  • 50 gr of butter, melt it
How to cook?

First to do, make some custard for the mousse mixture...boiled some water in a pot then whisk the egg yolk, pinch of salt, and 1 tbs of sugar in a bowl. Then place the bowl over the boiling water so the custard get the slow heat then pour the milk little by little, heat it until the custard get thick, set aside. 

for the cookie base, crush the oreo biscuit the mix it with the melt butter, put it under the glass or cake pan. push it evenly on the surface, let it freeze in the freezer for half an hour.


After we made the custard and cookie base, now lets make the pumpkin mousse, mix the mashed pumpkin, half part of whip cream and custard, nutmeg powder, cinnamon powder, 1/2 tsp of vannila extract, 5 tbs of sugar and pinch of salt, set aside. Mix 1 tbs of gelatin powder with some milk, stir it until the gelatin powder are dissolved then place it over the pot with boiled water for about 10 minutes. mix the gelatin mixture to the pumpkin mousse mixture. Pour it to glass or cake pan for the first layer let it cool in fridge for 2-3 hours. 

For the cheese mousse, mix the cream cheese, half part of whip cream and custard, and 5 tbs of sugar. Mix it all together, set aside. Then  mix 1 tbs of gelatin powder with lemon juice, stir it until the gelatin powder are dissolved then place it over the pot with boiled water for about 10 minutes. mix the gelatin mixture to the cheese mousse mixture,mix it all together. Pour it to glass or cake pan for the second layer let it cool in fridge for 2-3 hours.


Voala... Pumpkin and Cheese Mousse are ready for the Halloween Feast's dessert. You can decorate it with some spider shape chocolate made form melted chocolate, strawberry or anything you want.

Halloween Feast: Spiced Mutton Subs with Pumpkin Sauce



After the creamy and mild appetizers why not spiced up our mouth a little bit with Spiced Mutton Subs with Pumpkin Sauce as the main course...and here's the recipe.

Ingredients:


  • 300gr of Mutton or lamb meat, sliced dice
  • 1 Bagguette bread
  • 100gr of Lettuce, chopped
  • 100gr of Mashed pumpkin
  • 2 tbs of Plain Yoghurt
  • Sliced pickled cucumber
  • 200ml of Beef stock
  • 1 onion, thinly sliced
  • 2 Red chilies, chop
  • 3 cloves of garlic, chop
  • 1 tsp Paprika powder
  • 1 tsp Nutmeg Powder
  • 1 tsp Dried Rosemary
  • 1 tsp Cumin Powder
  • 1 tsp Cinnamon Powder
  • Salt and pepper
  • olive oil
How to cook?

First to do, season the mutton with salt, pepper, paprika powder, nutmeg powder, dried rosemary, cumin powder, cinnamon powder and olive oil then rub all the spices until the mutton is covered evenly. Set aside for 1 hour or you can let it in the fridge for one night for better flavor. after that, heat some olive oil on the pot then saute the onion until caramelized then add the garlics, chilies, and the mutton. After the mutton turn brown pour the beef stock to the pot and cook until the stock is reduced and become thick, don't forget to season it. Set aside.

Slice the bagguete bread in the middle like serve for sandwich, toast it untill golden brown and crisp. For the pumpkin sauce, just mix the mashed pumpkin, plain yoghurt, olive oil and some salt and pepper. Then back to the subs again, just add the chopped lettuce, spiced mutton, some pickled cucumber, and pumpkin sauce. Voala...Spiced Mutton Subs with Pumpkin Sauce just ready to full your hungry belly and spiced up your mouth..

Halloween Feast: Pumpkin Soup


So this is the recipe from the Halloween Feast full course for Pumpkin Soup as the appetizers.

Ingredients:

  • 1 Pumpkin, boiled or steamed until soft
  • 1 Carrot, peeled, chopped
  • 1 Onion, chopped
  • 2 cup Chicken stock
  • 1 tsp. of dried oregano
  • Some Paprika powder as you like
  • Some Cinnamon powder
  • Some Nutmeg powder
  • Baguette bread, sliced
  • 1 tbs. of butter
  • 1/2 cup of cream
  • Some dried basil
  • salt and pepper
  • Plain yoghurt
  • 3 tbs. Olive oil
How to cook?

 first, mashed the boiled or steamed pumpkin and set aside. then heat the olive oil in a pot than stir the onion til golden brown then put the carrot. pour the chicken stock, mashed pumpkin, paprika powder, cinnamon powder, nutmeg powder, and dried oregano let it boil til the carrot getting soften, check it by mashed it. while waiting the soup boiled. Melt some butter then mixed it with dried basil the spread on the both side of the sliced baguette, toast it on the pan til goledn brown. After the soup is boiled and the carrot is soft turn off the fire then blend the soup in blender or you can use hand-blender to do it. Blend the soup til all the ingredient is mixed up and make sure nothing is still in chunk. Then turn on the fire again, pour the cream and some butter, add salt and pepper for seasoning. then pour some plain yoghurt before you serve it~

The Halloween Feast

Trick or Treat!!
Happy Halloween for all of you!!




When everybody is making jack o' lantern with the pumpkin why we don't cook this shinny orange ball to full our hungry belly.

So I get an idea to cook a full course of a dinner for this halloween with pumpkin as the ingredient of the foods.

For appetizers I made Pumpkin Soup to excite your tongue... the for the main course is Spiced Mutton Subs with Pumpkin Sauce, then for the dessert I made Pumpkin and Cheese Mousse, why you sweet your teeth with the candies when you can make this simple and delicious treat like this...
